VMWare will only use one CPU. Unless of course, you are emulating
multiple PCs, say to test network software.
  You can leave it running - it wont suck CPU when idle. Just turn off the
screensaver :)

Mind you, a dual-celeron board & CPUs for <$600 is rather sexy.
