People tend to over complicate sendmail.

With the newer version, most of the features you are ever likely to need
are defined as m4 macros.

On a debian system, you edit the /etc/mail/sendmail.mc file and add in the
appropriate directives to make sendmail do what you want.  You then run
the "sendmailconfig" command and regenerate the .cf file.

Also on a debian system, cf.README has all sorts of interesting stuff in
it.
