I use cdparinoia for ripping and bladeenc for encoding.

I use cda (which comes with cmcd) to do the cddb lookups and a perl script to 
actually orcestrate the 3 apps into one proces. So all I need to do is
bung the cd in and say "ripit" .... about an hour later all is done :)
