I think a UMSDOS install is exactly what you're after, Mike - give it
a shot.
Your other two options are ;
1. LoopLinux (formerly DosLinux) ;

ftp://mirror.aarnet.edu.au/Linux/distributions/doslinux
This will place the whole Linux system inside a single FAT file. It
might also be good for building a UMSDOS system if you're having
trouble getting other things to install.
2. FIPS to shrink the size of your FAT partition, then use the free
space for a traditional Linux/ext2 system. Lots of people do this.
You can still access your ext2 files from DOS - you'll want something
like LTOOLS ;

Seriously, though, backup your vital files before fiddling. This is
always good advice, often ignored, often gotten away with, but it does
bite you sometimes. ::-/
