Try Firestarter; a GNOME application, available from
firestarter.sourceforge.org; it runs a wizard to set up a basic
firewall, then sits in a panel dock and flashes red when someone probes
your server. It then gives you the option to examine the source/port of
the probe, and allow or deny connections from that source/port in the
future.
