Because, as you said, the MX record is gone.  I assume most MTAs will
treat this as a temporary error until the DNS of an offending domain is
fixed.  It's not going to connect to @<whatever> as a guess as this just
isn't how it's supposed to work.

I can't recall the exact syntax but back in ye olden days there was a
sendmail hack to control a mail's routing through the email address, I
think a % was involved somewhere but I doubt many MTAs actually honour
it anymore.  A better way would be to set up your local version of
postfix to send all mail for $domain to whatever IP you want.  I know
the syntact to do this for qmail but not postfix, sorry, but I presume
it's easy.  Or if that fail's just set your smtp host in your mail
client to the ip you want, send the mail, then set it back to your
normal smtp host.
