I'd like to know more about these 'collaboration' features.  I know you can
share calendars, invite people to meetings via email and have the schedule
automatically updated, etc, but what else is there?  If you press him about
it you might find he's probably heard someone talking about it, or read a
magazine article, and doesn't really know what he wants.  Maybe some highly
paid business analyst has come in and said 'the answer to all of your
problems is Exchange'.

I'm sure there is a much simpler, secure and less costly solution for it.
PHPgroupware springs to mind, and I'm sure there are plenty of others -
although they may or may not have the same tight integration with email that
outlook/exchange has.  Again, you need to find the REAL need and find the
right solution for it.

The Openmail product that Christian suggested is supposed to be a drop-in
replacement for exchange, but HP are no longer developing it and will be
dropping support for it at some stage in the not-too-distant future.
