Usually its done with PCI ATA controllers - you can buy 2 Promise ATA100 
controllers on a PCI card, for example. Apple might do something cheeky 
and _very_ apple like having special apple-only low-form-factor 
controller card slots, but I doubt it, they're finially coming around to 
standard peripherals (PCI,AGP?,USB,IEEE1394,etc).
