mutt is an all-time favourite, but if you want a GUI client, check out
Mozilla.  While PGP/GPG support isn't standard just yet, you can use
enimail:

http://enigmail.mozdev.org/

It integrates with PGP or GPG, so everything should work smoothly if
it's already setup.

The latest (unstable, although seemingly stable) version handles
PGP/MIME, so I'm extremely happy with it.
