uw-imapd is your IMAP server, but it does not handle outgoing email.
IMAP and POP3 are protocols for retrieving mail from a spool or inbox;
SMTP is for sending and delivering mail.
According to your headers you're running exim, at which point I can't
help you other than to suggest that if you're going to play about with
virtual domain hosting, you really might want to install postfix (since
exim is weird, and sendmail has yet another nice hole in it :)
