dvbstream -o -ps vpid apid > program.mpg

Easy as that..
To watch live
dvbstream -o -ps vpid apid | mplayer -

I get satellite over here and I tell you I'd never go back to analogue 
broadcasting if I can avoid it..

dvbstream and cron makes a great vcr :p)
