In Debian, as with most distributions, userland packages are not
compiled against kernel headers anyway. Or rather they are, but not the
headers of the kernel you're likely to be running.
The kernel.org sources will be fine, and you can still use make-kpkg to
compile them into a Debian package.

That's only the case of the Debian sid kernel binaries. Building and
using a 2.4.x kernels under woody will work; installing a
kernel-image-FOO package from sid will not. Any 2.6.x kernel will
require a few backported packages.
