Sadly, it is often the general practice to add an apostrophe if you
really are not sure if there should be one. It seems to be a form of
insurance, you just never know if it is needed but you feel more
comfortable knowing it is there..

"Often general practice" does not equate to "correct".

Look I'm not pendantic about gramma and spelling, but I am good enough
at it for sentences to just "look wrong". I must say the exponential
proliferation of apostrophies really grate with me.
