Generally called Freeze or Freeze panes.

Yep. There's a little thick black rectangle in the bottom right-hand
corner that you can drag across to split up your spreadsheet
(there's also one in the top right-hand corner for rows too). Drag
it to where you want, and go Window -> Freeze.
