The best tool I've found is DVD::rip, which uses transcode. My
experience is that transcode produces better rips than mencoder. It's
in standard ubuntu repositories. It's fairly easy to use - just work
across the tabs left to right.

This particular piece of software was an absolute nightmare to
intstall under Slackware, but is point-and-click easy in ubuntu :)
