This being installed in a VMWare type situation, the first thing to do would 
probably be to install VMWare tools. This tends to sort out all sorts of 
little problems as well as giving much better video and mouse performance.
As part of the tools install you will be asked which resolution you would like 
to use.
A problem doing this is that Ubuntu kernel is compiled using a different gcc 
to that which is installed by default.
There is a page explaining this and how to correctly compile the tools on the 
Ubuntu documentation site.
