If those clients have reasonable implementations of offline imap, it 
shouldn't be a problem. (I would add a filter to move the messages to 
another folder on the clients, to prevent them getting wiped out from 
the client if you synchronise.)

If you find your clients' offline imap implementation lacking, this 
scheme is really not much different from a pop3 setup where you tell 
the clients not to delete messages from the server when downloading. 
Most reasonably good clients will also let you specify that read 
messages should be deleted from the server after a given delay, 
eliminating the need for server-side purging (and further guaranteeing 
that this isn't done until at least one client has a copy).
