Thanks to Tomasz, Ben, Patrick and Bernd - you guys are smart enough 
realise I need the 'i's dotted and 't's crossed !

I'll go the new drive / LVM way and let you know how I get on.
Meanwhile I'll read the man on cp and follow Patrick's link to LVM 
information, clean up /var/log and try to follow what happens when 
'mount --bind' is executed...
