I didn't worry with Postfix for POP3/IMAP, and went for Courier
instead. Postfix handles outgoing and incoming mail, Courier handles
user connections. Courier is reasonably easy to setup, too (from
memory - it was a long time ago :).

Post some logs and your configuration and we can help more.
