Not quite like you want to, but I've done it.

OpenSUSE 10.2 with VMWare Server and XP (and W2K).

The VMWare manuals are pretty ok on how to install. The problem I had
was getting XP to activate (since it'd already been installed on the
same machine on bare silicon), but a call to MS and an explanation that
it was the SAME PHYSICAL MACHINE and they were pretty nice.

Hardware - AMD3500+ (single processor) with SATA disk and MSI
motherboard.

I only have one monitor, so I can't help you with dual monitors.
