Thanks to Daniel and Thomasz, the job is now done.

Transfers actually ran at 987 Kb/s.

 I increased the block size to 1024 and just let it run while I slept - 
woke up next morning with Linux living on the new drive.

I just had to re-install Grub and all is happy.
