Perhaps fire up a linux server on a free tier somewhere (!) with Mumble
installed. You can record the multiple people who turn up into either
one (downmixed) audio file, or multiple separate files. The nice thing
about multiple separate files is, when you mix them together you may
then chose to 'position' the audio so different people are separated in
left to right (stereo) audio...
