LedgerSMB may well meet your requirements here.<br>
<ul>
<li>It's low maintenance in that updates are made available as
debian packages ( it's also possible to install and update via
git if you want to get your hands dirty for the install)</li>
<li>It's very configurable, and also fairly easy to extend for
special needs (It's written in perl)</li>
<li>It's certainly usable by non-CPA type people, we have one
person businesses all over the world using it, as well as
Corporate level businesses that do 10's of thousands of
transactions per week.</li>
<li>It tracks COGS (Cost of Goods Sold) and has good reporting out
of the box, and additional reports are fairly easy to add, so
revenue recognition is covered</li>
<li>It currently handles Multi-Currencies fairly well, although
there are some minor limitations.<br>
There is a complete overhaul of Multi-Currency already done,
It's expected to land sometime during the 1.5 lifecycle.<br>
The delay is in working out a sane data migration mechanism from
the old to the new scheme<br>
