You can specify an interface as a parameter to dhcpd. In my case dhcpd kept
causeing diald to dial my ISP and this fixed it. You will probabally have
filtering on the PPP link so the ISP will not see any packets anyway.

I don't know if this will solve the default route problem that you have
since mine is set to a psuedo slip device for diald.
