For generic unix I think you will have a hard time finding an advanced
course. Anything advanced is going to have to delve into OS specfic
stuff, which I dont think you want. 

I think unix admin is typically a learn on the job type of job. A The
"Unix System Administration Handbook" by Nemeth and others would be a
excellent text book for such a course.
