Jeremy,
You mentioned that you would like to see some database 
stuff.
Well, if you are interested Jeremy (and others), I now have
my Native Magic (database) for Linux up and running which
is specifically aimed at rapid web development.
I have only dabbled in the basics so far but it is enough
to get an idea how fast, in the RAD sense, this system is.
 
I would be happy to demonstrate how it all works (no tomatoes
to be thrown at the new kid) at one of the meetings if there
is enough interest.

Roll your own distribution, you mean.  I agree this is a great idea. 
You pick up bits of it here and there when you learn about the kernel,
init, login, etc., but it would be good to see someone tie these all
together and create their own booting system from scratch.

I would also like something on Perl and databases.  Could help to
present on that too, or general networking, shell, Apache, DNS, Samba,
security (I volunteered before but I was a bit vague; still am). 
Another thing I wouldn't mind someone presenting on is NFS.
