I'm not sure there is really much to compare between the two.  I've installed 
both here and haven't found that much difference.
Redhat:
- greater stability
- Better font support

Mandrake:
Reiserfs support
Some newer packages. eg Gnome, Kernel
better hardware detection?

Both are easy to install and have heaps of applications.
