There is an option to remove that, but it doesn't have a UI yet:

// Turn off graphical reply style in the message window
pref("mail.quoted_graphical", false);


Close Mozilla and put the pref() line in a file called user.js in the
same directory as prefs.js (which will already exist and contain your
preferences).

(if you decide to remove it, you will probably need to delete it from
prefs.js as well)
