We have a single machine (VIA EPIA800) that boots of a CF drive and has 
a removable HD Bay in it.

We have a padded flight case with two holes for the Disks.
Every day we rotate the removable drive and switch the backup machine 
on. Starting at 9 pm it runs it's backup over the network, E-mails me 
any problems and turns itself off.

If the girl who swaps the drive notices the machine is still on, it 
means it has aborted it's backup for some reason and she gives me a 
yell. Otherwise she swaps the disk, turns the machine on and gives the 
case to one of the other directors to take home with him.

Cheap, easy, reliable and scaleable.
