Wow haven't touched stuff like this in ages :P
CIS is usually used for large format printers (think 17" wide printers)
Bottles are usually 500mL, and there used to be a howto for the Encad
NovaJet II and III.
It usually involved drilling a hole in the top of the, fitting a
right-angle bracket to the top of the cartidges, attaching a clear tube
from the bracket back along a flexible cable guide that looks like a track
from a tank or bulldozer, and over to a shelf with bottles of inks raised
slightly above the level of the ink cartidges.

WARNING!! The ink cartidges from a NovaJet are *MOSTLY EMPTY!*, they have
a very small amount of foam at the bottom, and the rest of the cartidge is
completely empty, allowing very fast ink flow. I wouldn't be suprised if
the foam in an Epson cartridge is there to stop this kinda of thing, and
also to obscure the amount of ink in a cartridge. ("Epson? Nah they'd
*never* do something as mean and nasty as that!" :P )
AFAICR, Older Canon cartidges were better, and the HP cartidges were
better still.

The Large Format Printers used to be available with some optional
overpriced linux-underneath crap RIP software, but I think they went
purely WinNT after that, and I haven't been involved with the signage
industry since.

Oh and don't get me started on Pantone colours on a inkjet!!!! Bleech!!!

Any futher replies, please reply directly.
