All you need to do is edit main.cf and make sure your domain name is
listed in "mydestination" (and then reload postfix)

Then ensure the lowest numbered MX record for your domain points to your
IP address (and make sure there are no firewalls blocking port 25)

You can run this concurrently with a fetchmail setup so you don't lose any
email during the changeover.
