You can get shielded Category 5 (STP).  Never had to buy any myself, so 
don't know the cost relative to UTP.

Even if the throughput isn't needed, I personally don't think its worth 
buying legacy equipment when in the future you might need the faster 
speeds anyway and you'd just have to go back and do the job again (and 
that'd cost more money in the long run).
