In addition to reconfiguration as per James' suggestion, you can also 
(in gvim) pick from a number of preconfigured schemes by selecting "Edit 
  -> Color Scheme"

I'll finially be happy when there's an option to embed vim into mozilla 
for editing mail. If it could use it in the HTML composer that'd be 
exceedingly cool too, as then I'd use it for more than filling out 
vim-created templates.
