I strongly favour postfix, myself. The only downside I've found is that
it (unsurprisingly) doesn't support the milter interface, so no
MimeDefang.

It's actually shockingly well documented, so in Debian remember to
'apt-get install postfix-doc' and RTFM. It's well worth it.

If you're running woody, you'd be well advised to use the version of
postfix from backports.org .
