I don't know _why_, besides what you've already said, but a note for
people using recent Debian (post-Sarge) or Ubuntu (post-Hoary): you want
to use the /dev/mapper/VG-LV syntax in /etc/fstab or your machine
probably won't boot. The mkinitramfs script that generates the initrd
which mounts your root filesystem is "dumb" and looks for /dev/mapper to
decide whether or not to include LVM in the initrd.
