I believe it is possible to configure acls under linux and et samba to
work with them, but its not something i've tried. Windows volume
snapshots are likely to be a bit simpler to work with long term.

600 Gb is going to be bandwidth intensive disk and network - at
1000BaseT Max throughput is 125Mb/s.

600G is 13 hours at that rate, so you need disks and controllers that
can sustain prolonged throughput at high rates.
