Sounds like your problem is with "NetworkManager", the automatic GUI thingy?
It does a lot of annoying things when you try to use a LAN and 3G at the
same time.

To share a 3G connection, you might need to do things a bit more manually.
Try 'pon' to run pppd, with /etc/ppp/peers/XXX holding the settings.
To configure the sharing easily, try "firestarter".
