Just that feature alone knocks out most of the competition.

Proper, on by default, multi-person (more than 2) E2EE is something
that's only just now being added to Jitsi; and to Matrix in front of
Jitsi - which might be the easiest way to manage keys in practice.

Another option would be having a private VPN (Wireguard, TINC, OpenVPN,
IPSec...) to somewhere central and running, your own, say, Bigbluebutton
instance over that. (making sure it can't talk to anyone _without_ the VPN)
