[plug] E-mail Archiving with Exim

G'day all,
We have a system here where all our mail comes in from iiNet over one pop-box
via fetchmail and is managed and distributed with Exim..
I have an effective system where all incoming mail is copied to an archive
box, done with the aliases file.. but the requirement has been raised to
archive all outgoing E-mail as well..
Having read the docs and not seen anything remotely like this.. has anyone
done it.
All the workstations except mine, run Eudora, and spool the mail to our
local server, which then uses iiNet as a smarthost to send it.
Is there an easy way to get the local server to tap that feed and send it
to a local archive file?
I'm sure I'll find a way to do it, but if anyone has already done it, advice
would be appreciated..
