If you port Sausage using a common GUI kit like GTK or
Qt, it would almost be hard to not make Sausage also
run on FreeBSD/OpenBSD/NetBSD, QNX, Solaris, BeOS,
HP-UX et al, all of which Run X11. Mac OS/X would not
be a long reach from there.

Both GTK and Qt have Windows varieties, so except for
mundane things like backslash versus slash in
filenames (and Windows accepts slash anyway since the
whole concept was pirated from UNIX), you would barely
need to differentiate by OS.

You would also find it relatively trivial to offer
plugins in languages like Ruby, Python, LISP and PERL,
and to use portable graphics tools like The GIMP as
plugins (ie, get The GIMP to make images and the like
for HotDog using HotDog-generated scripting).

Labour-saving, flexible, earns you brownie points, and
no licencing costs. How could you say no? (-:
