I guess this is where I'm getting confused. Where is the MX record kept? Do I 
set up DNS on the server and that's where the record is held and served to 
the net?

I believe I've already done that. But I can't test it since netregistry is 
currently handling my email for that domain and has an MX record for it(one 
month free with the domain purchase).

I've read that a secondary mail server isn't absolutely necessary?

I meant, do I need the isp to keep the MX record?

I believe iinet allows this with my account. I actually called them to ask the 
questions before sending to the list but the person I spoke with couldn't 
answer these questions. Quite posibly do to my ignorance and inability to 
explain what I wanted.

But I know pluggers are mind readers.  :)
