I've heard that it's good practice to have several servers set up;
from the NTP docs:

      NTP really prefers to have access to several sources of lower
      stratum time (at least three) since it can then apply an
      agreement algorithm to detect insanity on the part of any one of
      these.

So there you have it - should you ever need to detect insanity, you
can do it with three time servers ;-)
