So far the suggestions seem to be mainly PHP and database-backed wikis.
As someone with an aversion to both of these, I've found MoinMoin to be
quite good.  It's written in Python and fairly simple to get going.
It's also no unknown - it's used for wiki.ucc.asn.au, the Ubuntu wiki,
the Debian wiki, and various others.

There's also Oddmuse, which is a very small Wiki written in Perl.  It's
not as featureful as most others.

Ikiwiki is also an interesting one - it backs onto a Subversion
repository, which means you can do edits by checking out the repo,
fiddling the files by hand, and committing.  It can also also output a
set of static HTML pages for the wiki.  If I was going to have a wiki
that was more like a normal web site with just a handful of people
allowed to edit it, I'd look at ikiwiki.
